"Occhio di Civetta" is a wine produced with 100% Syrah grapes. The harvest of the grapes destined for our “Occhio di Civetta” is done when the grapes have developed their maximum varietal expression, favouring the typical aromas of the variety over the structure. After a light maceration at cold temperature aimed at enhancing the aromas, the grapes start the fermentation a controlled temperature of about 15 days, where the operations carried out are all concentrated on maintaining the fruit. The wine thus obtained starts malolactic fermentation in steel where it remains for about 6 months. Then there is the bottling where the wine ages for another 6 months before selling.

THE NAMEThe “Occhio di Civetta” is a small calcareous stone found in our lands of Badicorte and only here. Rough, round, and yellow, it remembers an owl's eye at night. The local elders say that it is precisely this stone that gives strength and structure to our wines, and we like to think the same thing.
TASTINGRuby red wine with purplish notes, the nose reveals aromas of fresh fruit that are well linked to a delicate note of spices mixed with white pepper. In the mouth it enters fresh and vibrant, the notes of fresh fruit and spice return, to which is added a sweet note of licorice. A good acidity accompanies the whole tasting.
